I'm hesitant to send a text message as I'm not sure if my message sounds polie enough:
"Hello Giselle,
I hope you are doing well, keeping safe and having a good start to 2022!
I hope I am not too late in getting back to you but I would like to accept your kind offer of a letter of recommendation, and therefore ask if you are still willing to provide me with one?
Hope to hear back from you soon!
(alternatively: I hope you don't mind me asking and lI'm looking forward to hearing back from you)

I'm aware that basically all sentences in this message start with "I hope" but I don't know how it would be better..I'm open for any suggestions!

Lovely English and polite but in my opinion, a little too groveling but OK.
Alternatively you could do something like this.
"Hello Giselle,
I hope you are doing well, keeping safe and having a good start to 2022!
(add a sentence about what is happening in your life).
Can I accept your very kind offer of a letter of recommendation? it will be very useful to me!

it's certainly polite/deferential enough, and the English is great.
i would defer less if someone already agreed, and can suggest how i might structure a similar note.

"Unfortunately", I already sent my message to the person and looking back, I also find it a tad too groveling and should have done it as you suggested.
The person has already replied however, maybe I can do it better in my reply and try to be less "groveling"..
