Caught of guard already implies "suddenly", so you can simplify to something like:
I was caught off guard by the sight of you in the crowd.

Btw, if I say "Caught off guard by the sight of you in the crowd", would that still make sense? Like, would it still be implicit that I'm talking about "me getting caught off guard by you"?
I'm asking it because I've heard many songs where the subject of the sentence was implicit, I don't know if it is grammatically incorrect or not, but the lyrics still made sense.
In my case, "Caught off guard by the sight of you in the crowd" would fit the melody better.

Yes, you can often ommit the "I" in a song when it's clear you're talking about yourself.
Look at the lyrics of Creep by Radiohead for instance.
