@handsomeish yes, it this case it is more common to cut out the word "on." But if it said "200 people were present at the meeting on Tuesday," or any day of the week, you would say "on."

@handsomeish for "See you Monday," I think that "See you on Monday" also works well. "See you Monday" is very informal and natural, "See you on Monday" is just a little bit more formal, but both work well equally to me.

When a number is the first word of the sentence it’s written out
2,000 students arrived = Two thousand students arrived
“On that day” emphasizes that *particular* day
OR
at the meeting that day
It depends on if you want the emphasis or not.
