@kiosuke “Would you mind me doing […]” because the other sounds weird ^^ (I’m not sure if it’s correct grammatically either but most of the time you’d never here the 1st sentence in my opinion)

The first sentence is actually the grammatically correct one, but most native speakers don’t know the grammar rule applied there. So as @Moosherum said, you’ll probably never hear it used because it sounds weird to native speakers.
Personally, I probably wouldn’t say the second sentence either though. I would say:
