Folk is the Germanic way of saying people. Folk = people
Guy is a synonym for man. It isn't used much with females. (groups of males and females mixed together)

Both are very casual. "Folks" tends to seem more gender-neutral than "guys". Although "guys" is technically also gender-neutral, some people view it as leaning more towards addressing men.
Also, I see "guys" being used more towards groups of friends. "Folks" tends to be towards a large group of people or one that you might not know as well (for example, coworkers, classmates, a casual speech, family). This depends on the person, though. I use them interchangeably.
