I thought あんまりmeant "not so much or not much" but here 君があんまりすてきだから… means you are too beautiful. How does this work?

does that mean if it's not with ない it's similar とても？

pretty much, but it can't always be used where とても can.
For example, you saying 今日はあんまりあつい。 doesn't sound right.

Not that I know of.. I think you just have to get a feel for it. I'd recommend just using it with negative phrases, but know what it means in the positive form enough to be able to use it naturally.

あんまり is a casual version of あまりにも.君があんまり(あまりにも)すてきだから忘れられない。You are so beautiful so I cannot forget you.
その理論はあんまり(あまりにも)複雑で理解できない。That theory is too complicated to understand.
