Up in the northwest there is a traditional dish called "Kohl und Pinkel" – a hearty stew of chopped kale served with with cooked and smoked grainy sausage called Pinkel, as well as another smoked sausage called Kochwurst (Mettwurst-type) and Kasseler (slices of smoked pork cutlet) and boiled potatoes. It's traditionally a winter treat.
In the Rhineland area (Köln etc.) there is simple dish called "Himmel und Erde" (heaven and earth) – it's mashed potatoes mixed with mashed apples served with roasted onions and topped with fried slices of a blood sausage.
A classic meat ball dish is Königberger Klopse with boiled potatoes – the meat balls are made of minced pork and beef and originally also added with anchovies (but anchovies are often 'forgotten' nowadays). The sauce is white, contains a bit butter, has capers, and a hint of a sour note from sour cream.

@Krokodilo: I've never ever seen or heared of "Himmel und Erde" though .. I'm living in Rheinland for +24 years 😅 Guess it's really not that popular?

Himmel un Ääd in Köln... But it's not exclusive of the Rhineland area.
