We don't use 老いた人 in daily conversation.
老人 is generally found in novels but is not popular in verbal communication, except for 老人ホーム.
高齢者 is commonly used in official documents or news.
年寄り is not a polite word.
Instead of it, お年寄り is the most popular and polite.
