Question about English (US)

Additionally, it was revealed that Paul attempted to burn evidence that were covered by her blood to hide their guilt. Despite the police considered to be a strong case, the DPP declined the men’s prosecution and withdrew all charges, reasoning that there was a lack of evidence. does this sound natural?

I wrote 'were' because there were a couple of evidence, but I learned the word "evidence' can never be written in plural so I am not sure if I am writing correctly or not ;/
