Question about English (US)

*Please correct if necessary. Grammatically strict checking is welcome!
*This is a conversation from a cooking TV show. A reporter is eating a pizza.

Reporter: In the bolognese sauce and cheese, the sweet flavor of the onion fills my mouth the most. Is onion the only vegetable on this?

Chef: That's right. Spring onion itself is a good ingredient. To bring out its own flavor, I cooked it using the very minimum of seasonings. Simple cooking is enough to bring out umami of the seasonal spring onion.
