Ive found 「what do you like to do on the weekend?」in an English textbook（side by side2 )「the」means... particular thing. So 「on the weekend」means, what I like to do on the specific weekend?? or just regular weekend??

Your confusion is very understandable, but in this case, "What do you like to do on the weekend?" is understood as being in reference to just most weekends in general. If you want a different way to phrase it, though, you can say this instead: "How do you like to spend your weekends?" or "What do you usually do on weekends?" And to ask about a particular weekend (the upcoming one), you can say "What are you doing this weekend?"
