There is no difference in speech. But the literature form is ending -a, -я. So I recommended use the literature form лука/чая and just know that луку/чаю is not a mistake. много лука = много луку (speech form) стакан чая = стакан чаю (speech form) отпил чай = отпил чаю sorry but this is no rule, just need memrise and you can t say отпил чая, but you can say отпил стакан чая.
