Question about English (UK)

I recently faced a question I couldn't find a certain answer to.

In Ukrainian, there is a word "борщ" which basically means beetroot soup with cabbage, potatoes and whatnot. According to the transliteration rules I googled, the correct transliteration in English is "borshch", but some people, and, apparently, even Google Translate transliterate it as something like "borscht" which is incorrect from my perspective: in Ukrainian, we neither pronounce nor spell "t" at the end. So, which transliteration is correct, and why?
