it depends on the context of the question being asked of you. Both could be correct.
But, "I like to do cheerleading" would sound more natural as a stand alone sentence

With your suggestions, it would be I like to do cheerleading but sometimes, I would use the other option.

both work well in that context. if you were going to mention cheerleading, and then go into detail about it; then "I like to do cheerleading" fits best.
if you were listing things that you like to do, and move on to another thing you like; then "i like to cheerlead" works a bit better
