Question about English (US)

I have to explain about the menu of a restaurant that I'm working at in English to tourists. But I can't come up with proper explanation.
The menu is "assorted shellfish sashimi". I have to let customers choose how to enjoy eating the liver of one of the shellfish.

"There's a horned turban / sea snail in the dish. You can choose how to eat the liver of the shellfish between raw, boil and saute with butter. How would you like to eat?"

Is that natural?
does this sound natural?
