For example, if I say "the last day of school" I am really just telling you about a day, and I'm calling it the last day of school so you know which day I'm talking about. However, if I say "the final day of school", the focus of this phrase is that this day IS the last day. Also, final is most definitive; the last day of school could normally be the day before any vacation or holiday, but the final day of school usually would mean the last day of school ever (you will never go back to school).
