I often see nothin' and doin' and so on. Do native speakers sometimes conciously or naturally say "n" instead of "ng"? or is this just a writing style to show the speaker is speaking lazily or something?

Often times, when you see that in writing, the writer is showing how someone may speak. I, as a native speaker, don't say nothin', but there are some words (like when I'm speaking quickly with my friends) that I leave off the "ng".

Some native speakers don't use the rules of English and speak like that. But normally people do use the full word when they're talking.

Use of "n" instead of "ng" can be found in some accents, or when speaking really casually- ie "Whatcha doin'?" "Nothin' much." Generally, though, we use the full word, and when we do leave out the "g", it's not usually a purposeful thing.

I’m a Canadian, and when speaking casually, especially with specific phrases, we do often drop the “g”: How you doin? / Whatcha doin? / Bringin it with ... / Watchin TV, etc.
...

*but*, most of the time, we (here in Canada) do pronounce the “ng” sound ... the opposite is the case in the southern United States, in African American English, and with some urban American accents

Yes and yes.

In America we often say nothin' and doin' in casual conversation. If you see those words written somewhere, that is a purposeful technique to show the speaker is speaking casually or with an accent, depending on the context.

Most of the time it's casual. Sometimes it indicates an accent.

Either way, never use it in a business email ;)

They naturally drop the "g" with certain accents. Dropping the "g" is common in southern accents. People with southern accents are sometimes seen as slow and uneducated.
