I don't live in Helsinki, but I believe they will be open. In the past, on Sundays shops were open only limited times or not at all, but the law has changed since then.. Nowadays, shops can determine their opening hours quite freely, thanks to the law changing a couple of years ago (and as a result, there are more shopping opportunities on Sundays). If the shop owner wants to keep the shop closed on Sundays that's fine too. Grocery stores are usually open every day.
There are some special 'holidays' and during those shops will have limited opening hours/be closed.
