"take on me" is an expression ... said alone this way it's not a complete sentence. TAKE used this way is a Noun and means View or Opinion. It could be used in a sentence like this:
So, what's your TAKE ON ME?
(what do you think about me in relation to this situation?
His TAKE ON ME is completely off, he's got me figured out all wrong!
TAKE ME ON - IS a complete sentence. Take used this way is a Verb. This expression can mean "hire me" or "add me" as part of the team/group.
For ex., "They decided to TAKE ME ON and I've been working there ever since."
or It could mean "fight" or "go up against me" (like an opponent.)
-- If you decide to take me on in this fight, i will be a worthy opponent.
