Leute: people/folks/guys, a more or less casual expression
Menschen: humans, but I feel that "Menschen" is actually used as "people" more regularly compared to the English term "humans".

can I say : Hallo Menschen? or only "Hallo Leute"?

"Hallo, Menschen!" sounds very strange, but it's correct."Hallo, Leute!" is perfect.

@cveti3888 It is kind of tricky to be honest. While saying something like
Der Platz ist voller Menschen/Personen
sounds natural, you would probably not say "the square is full of humans" in English. In your case, you would mostly prefer "Leute", both "Personen" and "Menschen" would sound off.
