"come sta" è una forma di cortesia cioè formale, viene usata quando si parla ad una persona che non conosciamo oppure ad un superiore (in ambito lavorativo, scolastico, ecc...)
Es. "come sta oggi Signor Rossi?" (non conosciamo bene il sig. Rossi quindi usiamo questa forma)
"come stai" invece viene usata quando siamo in un ambiente informale tipo tra amici, familiari e persone che conosciamo bene
Es. "hey come stai oggi Giulia?" (conosciamo Giulia quindi possiamo usare un tono più informale)
