No real difference here other than the idea that “Today is sunny” means this particular day is sunny, and “today it is sunny” is referring to whatever “it” is (the day) sooooooo not really any difference at all.
Past tense works the same too. “Yesterday was sunny” and “It was sunny yesterday”.
