You do not 100% have to put the (') but when it comes to writing, it would be proper punctuation, plus it would make a lot more sense. :)

No, you can't. The apostrophe represents the letters that have been omitted from the contraction, so it needs to be there. In some cases, it's important as it distinguishes between similar words, for example I'll (I will) and ill (sick).

well, if you’re writing something in a more formal setting and you’re allowed to use contractions, you should use the apostrophe with them. if you’re texting or online, it doesn’t really matter if you use the apostrophe or not. though it will cause confusion sometimes, for example with “we’re” — without the apostrophe, “we’re” becomes “were” but “were” is another word that already exists
