I would like to receive some sentences with "omitting" because I cannot see the difference between "omitting" and "apart from". Can I use it interchangeably?

To "omit" something is to exclude it from something. So to "omit" something from a speech is to take it out. "Apart from" refers more to exceptions: "I'm learning almost every language, apart from Xhosa and Galician." It's also a lot more natural. "Omit" is something to be used in more technical/formal situations.
