Muy es un adverbio. Y se utiliza en dos casos: delante de adjetivos o delante de otros adverbios. Siempre se utiliza delante, nunca se pone detrás del adjetivo a del adverbio.
Por ejemplo:
"Yo soy muy responsable."
"Es muy tarde, tengo que volver a casa."
Mucho es un adjetivo o un adverbio, depende de la palabra que modifica. Se utiliza en dos ocasiones. Se utiliza antes de un sustantivo o después de un verbo.
Por ejemplo:
"Tengo muchos amigos."
"En la fiesta de ayer comí mucho".
