This recipe is a variation on Spritzgebäck, also called "spritz cookies" in America, because they are shaped using a pastry bag (Spritzbeutel) or a cookie press. I think some meat grinders also have cookie shapers. There are many variations and recipes out there, some white and plain, some with cocoa and hazelnuts, ...

Chocolate and nut 'bars' (Spritzgebäck)
For ca. 40 cookies:
• 225 gram / 8 oz Butter (soft)
• 100 gram / ~3.5 oz Icing sugar (powdered sugar)
• 1 package Vanilla sugar
• 3 Yolks
• 2 'knife tips' / pinches Cinnamon powder
• 200 gram / 7 oz All-purpose flour
• 40 gram / 1.4 oz Cocoa powder
• 1 teaspoon Baking powder (not plain baking soda)
• 125 gram / 4.5 oz Ground hazelnuts
• 100 g Milk-chocolate couverture

• Cream the butter, stir in the sugar, vanilla sugar, yolks and cinnamon.
• Mix flour with cocoa powder, then stir in by the tablespoon
• Fold in the ground hazelnuts.
• Preheat oven to 180°C / 356°F (fan-assisted: 160°C / 320°F)

• Fill the mixture into a pastry bag with star-shaped nozzle.
• On a baking tray lined with parchment, make stripes of 4 cm length (1.5 inches).

Bake the stripes for about 10 minutes per tray, then take out and let cool for about 2 hours.

• Chop/break the milk-chocolate into pieces and melt it over a hot water bath. (Or microwave 1–2 minutes at 450 W, then stir)
• Dip the ends of the cooled cookies into the molten chocolate and let them dry on a cooling rack.
