"Obst" is generally used to refer to the general idea of fruit. Whenever you are not refering to one specific type or fruit or to one or several (specific number) of different fruits, "Obst" is probably the way to go.
"Frucht" or "Früchte" mostly refer to one or several piece(s) of fruit.
Obst ist gesund (general idea of "fruit", not refering to something more specific)
Da liegen ein paar Früchte (some (countable) various pieces of fruit, specific)
