“how you doing?” isn’t correct, but in very casual, informal english, we’d say it. we do this for simple questions, where “are” isn’t necessary. (“you hungry?” = “are you hungry?”; “you coming with?” = “are you coming with me/us?”)
if you feel very comfortable in english, and you’re speaking to someone you know in a very laid-back and informal setting, you can say it. but it’s not correct, and you shouldn’t say it in a formal setting. saying it is like using slang
