I was reading a book and in it, a character said
"Don't nag us, we just having fun."
Isn't this grammatically incorrect?
shouldn't it be "we are" or "we're" or is it correct?

You are correct. “We just having fun” is incorrect. It should be “We are just having fun”.

In some dialects of English, speakers do not include "is" or "are" when they are speaking casually.
In formal English, this sentence would be "we are just having fun", but the speaker dropped "are".
