Your statement is logical and correct, but confusing in English.
"The thinnest ink lasts longer than the strongest memory."
"You won't remember every detail you've learned, unless you write it down."
In English, some nouns are redundant here (brain, paper). In this case, "couldn't" is wrong, and you should use the future form "won't".
Otherwise very good.
