Almost the same, tho "I have no idea what she is thinking" can often mean "I don't know why she decided to do that", whereas " I have no idea what she is thinking about" would be like you saw her lost in thought and wondered what kind of thoughts she was having.
For example:
"Karen just threw away all of the pictures. I don't know what she was thinking."
"Look, he's running out into traffic. I have know I idea what he's thinking"
"I often see him sitting alone. I have no idea what he is thinking about"
etc.

They mean almost the exact same thing.
"I have no idea what she is thinking" has more to do with the person's exact thoughts, while "I have no idea what she is thinking about" is more about the topics or subjects they are thinking about.
For example: you're playing poker, and you wish you can understand her next moves. You would say "...what she is thinking".
But maybe you and your friend are going out, but you think your friend is distracted, but she won't tell you what she's thinking about. Then you would use "what she is thinking about".
I don't know if that makes much sense, but I hope that helps.
