The difference comes because of different languages. It is a common thing people who are not really fluent or well familiar with one language, they tend to form the sentence structure which matches their native language. The same goes with people from Mumbai or Maharashtra in general. Not everybody is that familiar with the standard Hindi grammar. But in Delhi, Hindi is the most spoken language so people are comparatively fluent in Hindi but they also have a hint of accent of other states which they share the border with [because Delhi shares its border with UP and Haryana] so that highly influences their accent.
But still nothing can be generalised as a good population of Maharashtra is very fluent in Hindi and the same goes for Delhi. And by fluent, I mean fluent enough that their accent cannot be easily spotted.
Most importantly these differences cannot be broken down on the basis of grammar because it doesn't really have to do with grammar.

@avtelkikar yes. That is there. I don't exactly know which region of Delhi but a certain population does use only "aap" but there are still people who use "tum" or even "tu"

@avtelkikar it's mostly "Bhaiya" for both the places.
I am not really THAT familiar with the lifestyle in Mumbai as I've never been there. But a lot of people from different states migrate to Mumbai so I believe it's what most people would use as not everybody would know if there's any other way to address them. So yeah I believe "Bhaiya" it is.
