I have seen two different forms for the same thing (in my mind) under the entry of "sector" in Oxford dictionary. Could someone tell me if both of them are interchangeable?
A: We have seen rapid growth in the services sector.
B: The largest growth has been in the service sector.

Yes, 'services sector' and 'service sector' are interchangeable.

Those two sentences don't mean quite the same thing though.
A just tells you that there has been rapid growth in the services sector - you don't know whether it has grown more or less than other sectors.
B tells you that the largest growth has been in the services sector, although you don't know whether that growth has been 'rapid' (it could be that all the sectors are growing very slowly)
