According to dictionaries, the "u" in mushy is pronounced like "u" in "hut"
But I feel natives often pronounce it like "u" in "push"
Is that correct? And why is that?

Agreed, there are regional variations. I say it like push as well.

@kapuchino That is difficult say. I can imagine a scenario where I would use the short U version. If I was trying to sound ironic, humourous, I might use it. I would use a slightly childish, disappointed voice, but followed by a facial expression that says I'm joking.
"It's all mushy/normal, it's all mushy/humor"

@kapuchino - it’s common. The US is a huge country with a lot of localized accents so no idea if one is more dominant,
