ostry: This knife isn't as sharp as it ought to be. (Ten nóż nie jest tak ostry jak powinien być.)
pikantny: Indian food is rather spicy.(Indyjskie jedzenie jest raczej ostre/pikantne.)

In my opinion as a native speaker you can use both e.g ostre jedzenie i pikantne jedzenie. But ostry is also an adjective SHARP, ACUTE e.g sharp knife -> ostry nóż or acute angle -> kąt ostry. You can't say pikantny nóż or kąt, cuz it's only for cuisine stuffs. Pikantny means just spicy and in the kitchen language ostry also means spicy I think. It's kind of synonym.

These words are synonymous, but "ostry" has also another meaning. For example: Lubię ostre jedzenie=Lubię pikantne jedzenie.= I like spicy food
But also: "Ten nóż jest ostry"=This knife is sharp.

I agree with @Izmael01 that knife can be sharp(ostry). But the food can be also spicy (ostre).
Ostry and pikanty are slightly different for me. Pikanty means spicy, but not so much - it doesn't bother u. Ostry is stronger than pikantny. Chilli can be ostre and ketchup is rather pikanty.

In everyday language we usually say "między" instead of "pomiędzy". "ostre" means - hot and "pikantne" - spicy.
