First of all, saying "bonito fin de semana" is weird. That means "beautiful weekend".
Anyway, if someone says that to you for some reason, a logical answer would be something like "sí, es verdad" (yes, that's true) or whatever you want but something along those lines.
Answering "you too" to "beautiful weekend" is strange, it could be understood as flirting (although maybe that's what you want🐤).
