Часовой - это человек, который что-то охраняет. Раньше говорили - "стоит на часах", поэтому и - часовой. Есть также слово Караульный, сейчас оно используется реже, чем Часовой. Караульный — это человек, который "стоит на карауле", то есть тоже что-то охраняет.
То есть Караул - это процесс охраны, действие.
Есть еще одно значение слова "Караул" — это церемония. Словосочетание "Почетный караул" - пример такой церемонии, имеющей свои правила: количество часовых, порядок их смены, форма, расписание, строевые приемы при перемещении к месту несения караула или при возвращении из него.
В Москве Почетный караул можно наблюдать у Кремля. Возле Мавозолея и у Вечного огня.
