It's 100% understandable but maybe you could make a few changes to make it sound a bit more natural:
"Due to the fact that my father is not particulary interested in hot springs my family has not too many chances to go there. At least that's what I think". (Maybe I'd remove the last part, but since you included "I think", that sentence covers it!.
But, these changes are just optional.
