@AbunchofAliens if you use i work at, you would follow this with where your work such as:
I work at the bakery
If you use i work on, this has to be a job such as a cruise ship or a task your job involves:
I work on a cruise ship.
I am working on a business
So most jobs, you will say i work at.

“Work at” is mainly used for jobs but sometimes can also be a skill (it does depend on the skill).
Example — I work at the grocery store.
“Work on” is a process for a project or long term goal.
Example — I will work on my language skills.

@AbunchofAliens Good example, this is where there is a difference in speech and written word. “Work on” is still more appropriate in both cases but some younger people will say “work at” for a skill/goal.

“Some people are born clever, I’m not one of them. I’ll work at it.”
Written word and speech
“Some people are born clever, I’m not one of them. This is something I will work on”
