I've heard 'do the shopping' used when someone is doing an errand, like buying their kids snow pants or getting groceries.
"I'll do the shopping if you pick up the dry cleaning."
Going shopping is usually for fun or for yourself.

People normally don't say "do the shopping". They say "go shopping", which basically means the same thing. When someone goes shopping, they are just shopping.

@sayurimick Since I'm young, I usually just do errands for myself, so I've never said it. But when I lived at home, both of my parents said it. I'll probably say it as well once I have a husband to say it to :)
