Buenas, tienes que utilizar "muy", la otra es totalmente incorrecta en esa oración.
Ej: "Soy muy sedentaria."
Ej2: Alguien: "¿Eres sedentaria?" Tú: "Sí, mucho/bastante" ---> ahí estaría correcto porque es en respuesta corta sin usar el adjetivo
"bastante" se podría utilizar en los dos casos.

muy, porque "muy" se usa para adjetivos. "mucho" se usa para adverbios
