the latter would be an emphatically affirmative response (as in, you're asserting the fact that you do like it)
ex:
A: What do you think of the cake I made for you? > o que você acha do bolo que eu te fiz?
B: I like it, thanks. > eu gosto, obrigada.
A: No you don't! you're lying! > não! você tá mentindo!
B: I DO like it. stop being a drama queen > eu DISSE que eu gosto. pára de ser dramática
