Is it possible to use "have to" with -ing as in "I hate having to do the dishes"? I feel like it sounds a little off but it's also quite the mouthful to say "I hate being required to do the dishes" or something.

It's totally fine. That's how most people say it – I hate having to do the dishes. He hates having to take the garbage out. She loathes having to tell him to take the garbage out --- 😁 very normal

“Having to” is correct and common to say, and “being required to” is a mouthful, so people don’t really use that one.
