It sounds a lot better if you say 'I saw many friends got Covid on Instagram today.'. It's not really natural to say 'I saw ON INSTAGRAM ...' :)

They are both grammatically correct, but the first says that Instagram is providing the vaccinations. That would be great, but I don't think they do!
The second version implies that all your friends had their vaccine today. I presume you mean that today is when you went on Instagram and the friends had their vaccines at any time before today.
If so, the best formulation would be "I saw on Instagram today that many of my friends have had the Covid-19 vaccine".

@dmrgxb I disagree. "On Instagram", "On Facebook", "On the computer" are all normal usage and I cannot think of a better preposition than "on".
