How would I say "I speak a little Japanese"?
Or rather, would I use 'ちょっと' or '少し/すこし'? And, what is the difference between those two and when would I use each one?

「ちょっと」と「少し」は使い方に違いがあるようです。
例えば、目上の人や学校の先輩に「ちょっと待っててください」という使い方はあまりしないですよね。
目上の人に使うなら、「少しお待ちください」もしくは「少々お待ちいただけますか?」が使われます。
それとは、逆に友達や家族など親しい仲の人には「ちょっと待ってて」「ちょっと遅れる」などが使われるでしょう。
あまり親しくない人や知らない人の場合「ちょっと」を使うと失礼にあたる場合もあるので注意した方が良さそうです。
また「ちょっと」は、若者言葉とも言われているので場所や人を考えて使うのが良いでしょう。
