I'm not sure if in Japan they use the term simp. But yes, it is correct

@Stephanie_devil Simp is usually used to describe people who are willing to do anything for the person they really like disregarding whether the person likes them back or not.
Saying 'I am a Japanese simp' will not make people think you are Japanese.
You can say ' I am really into Japanese culture or Japanese languange or Anime or Japanese music'
