On an English test you should say "If I were your boss". You need "were" because the "if" makes the sentence conditional, so you need the "subjunctive mood."
But in all other contexts you can use either. Many (maybe even most) native speakers will accept either, and many (if not most) will say either. Some people say that the language is changing with this rule.
