昨日勉強中に、寝てしまいました is natural
昨日は、勉強したまま寝てしまいました is okay, but a little unnatural. I think まま is used something is going on while you are doing something. as in 昨日は、テレビをつけたまま寝てしまいました 。 i.e. A TV can be on while you are sleeping, but you can't study while you are sleeping.
