There is probably no simple answer to this, since humor is often right on the boundary of what's acceptable to talk about - that's what makes it humor!
Starting out just avoid race, sex and politics. That way you're avoiding the biggest hot button issues.

People have different boundaries and likes when it comes to humor. Mine is pretty dark and sarcastic, so the jokes that I make or laugh at would be offensive to another person. To start out just avoid political or sensitive topics, and don't make fun of the person in front of you. If you meet a person several times it will get easier for you to know what you can and can't joke about.
