Both are correct! I think 2 is more common though.

Not bad. They would be understood by all English readers.
"The" needs to be capitalize because it is the beginning word of a sentence.
"Item" needs to be "items" because it is plural.
"20" needs to be spelled out. You spell out all numbers from 1 through 100.
"Your items will start shipping within twenty workdays."
"We will start shipping your items within twenty work days."
"Item" needs to be "items" because it is plural.
Both of these are perfectly acceptable English.

Seems to me that if there was only one item, it would be written,
"We'll ship your item...." not "start shipping your item...."
